Coconut Bread (no eggs, no fat, but rich and moist)

Ingredients:

  • 14 oz flour
  • 1/2 tsp salt
  • 3/4 pint milk
  • 1/4 tsp cinnamon
  • 1/4 tsp ground cloves

Directions:

  1. Mix the coconut and the milk and leave to soak for 30 minutes.
  2. Sift the flour, baking powder, cloves, cinnamon and salt into a bowl.
  3. Stir in the sugar.
  4. Add the coconut and milk and mix to make a soft batter.
  5. Pour into a greased 3lb. loaf tin.
  6. Smooth the top and bake for 1 1/4 to 1 1/2 hours at 350 degrees F.
