Ingredients:

  1. Method
  2. Combine the flour, baking powder and salt; add the coconut, sugar, vanilla and eggs and mix well;
  3. Gradually add the milk, mixing to form a firm but not sticky dough;
  4. Knead for a few minutes; form into 2 loaves and place into greased bread pans;
  5. Sprinkle the tops with a little sugar and
  6. Bake in a 180° F (350° F) oven for about 1 hour or until golden brown;
  7. Serve warm or cold.
