Ingredients:

Directions:

  1. Heat the brown rice syrup in a saucepan on medium heat. It will go from thick to liquidy to bubbly very fast. Allow it to boil for about 2 minutes.
  2. Pour the coconut into the syrup and stir until combined. Remove from stove.
  3. Line a 24 cup mini muffin pan with mini muffin cups. Put about a teaspoon of the coconut mixture in each cup and pack it down.
  4. Push an almond into each coconut ball.
  5. Pour the chocolate over each candy until you can't see the coconut anymore.
  6. Place in the freezer for 5 minutes until set.
  7. Enjoy!
