Ingredients:

  • 1 tsp cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/8 tsp salt
  • 2 large eggs plus 1 large egg
  • 1/2 cup dark molasses
  • 1 cup packed dark brown sugar
  • 3/4 cup vegetable oil
  • 3 tbsp confectioners' sugar

Directions:

  1. Preheat oven to 350°F. Grease and flour a 12-cup Bundt pan.
  2. In a large bowl, combine flour, baking powder, ginger, cinnamon, nutmeg, cloves and salt. In a separate bowl, mix applesauce with baking soda. In a third, large bowl, whisk eggs, egg white, molasses, brown sugar and oil until smooth. Add to dry ingredients and gently stir to form a smooth batter. Fold in applesauce mixture.
  3. Pour batter into Bundt pan. Bake in center of oven until a toothpick inserted in middle of gingerbread comes out clean, 45 minutes. Cool 5 minutes in pan on wire rack, then unmold to cool completely. Dust with confectioners' sugar and serve.
