Ingredients:

  • 3 (6 1/2 oz) cans minced clams
  • 6 medium potatoes
  • 1/2 bunch fresh parsley
  • 1/2 cup butter
  • 1 medium onion

Directions:

  1. Melt butter in large pot.
  2. Dice onions and sauté.
  3. Drain juice from clams into butter.
  4. Dice carrots and add to pot let simmer.
  5. Peel and cut up potatoes in to 1/4-inch pieces add to pot.
  6. Finely cut parsley and add to pot.
  7. When potatoes and carrots are soft rinse clams and cook for 5 minutes.
  8. Add half-and-half and cook through.
  9. Add pepper for taste.
