Claire's Broccoli Cheese Bake

Ingredients:

Directions:

  1. Steam the broccoli until crisp/tender
  2. Melt the butter in a saucepan and stir in the flour. Cook over low heat for 1 minute
  3. Whisk in the milk, stirring constantly.
  4. Bring up to the boiling point but do not boil. Stir until thickened. Stir in the hot sauce.
  5. Cool and whisk in the cottage cheese and beaten egg whites
  6. Combine the white sauce with the broccoli
  7. Pour into a sprayed or oiled baking dish (1 1/2 quart to 2 quart size)
  8. Top with the cheddar cheese
  9. Bake at 350 for 25 minutes, or until the cheese is bubbling and turning golden.
  10. Cool slightly before serving.
