Bacon Mornay Sauce

Ingredients:

  • 2 slices bacon
  • 2 1/2 tbsp butter
  • 3 tbsp flour
  • 2 cups milk
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 2 oz cheese , cheddar, swiss, parmesan, your choice 4ozs if using cheddar

Directions:

  1. Fry bacon.
  2. Remove bacon from pan; add butter.
  3. Add flour; purists say don't brown flour but I do because I don't like a raw flour taste, and I cook on high (sigh).
  4. Add milk.
  5. Season with salt and pepper.
  6. Cook until thickened.
  7. Add cheese. crumble up bacon and add here.
