Ingredients:

Directions:

  1. Preheat oven to 300*F.
  2. In a small bowl, combine the sugar and cinnamon; set aside.
  3. In a medium bowl, combine the flour, baking soda, and salt; mix well with a wire whisk and set aside.
  4. In a large bowl, using an electric mixer on medium speed, blend the sugars.
  5. Add the butter and mix to form a grainy paste.
  6. Scrape down the sides of the bowl, then add the eggs and vanilla; mix until light and fluffy.
  7. Add the flour mixture and blend at low speed just until combined. Do not overmix.
  8. Shape dough into 1 balls and roll each in the cinnamon-sugar mixture.
  9. Place 2 inches apart on ungreased cookie sheets and bake 18-20 minutes.
  10. Using a spatula, immediately transfer cookies to a cool, flat surface.
