Cinnamon-Sour Cream Streusel Loaf

Ingredients:

  • 1 cup sugar
  • 1 large egg
  • 1 1/4 cups flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup sour cream
  • 1/2 cup chopped pecans or 1/2 cup walnuts
  • 1/4 cup light brown sugar , firmly packed
  • 1 tbsp sugar
  • 1/2 tsp cinnamon

Directions:

  1. Cream together butter and sugar in a large mixing bowl.
  2. Add egg, stirring until blended.
  3. Add flour, baking powder, and salt gradually to butter mixture, alternating with additions of sour cream.
  4. Beat mixture just until blended, and add vanilla.
  5. In a small bowl, mix together pecans, brown sugar, 1 tbsp of sugar, and cinnamon.
  6. Pour half of batter into a greased and floured loaf pan, and sprinkle with half of streusel mixture.
  7. Pour remaining batter on top, and sprinkle with remaining streusel mixture.
  8. Bake at 350°F for 45-60 minutes or until toothpick inserted in the middle removes clean (if loaf starts to brown excessively, cover with foil during last 15 minutes of baking).
  9. Cool in pan 10 minutes, then remove and finish cooling on wire rack.
