Cilantro Shrimp Scampi With Cheddar Drop Biscuits

Ingredients:

  1. BISCUITS:
  2. Preheat oven to 450
  3. Line baking sheet withparchment paper or coat lighly with nonstick spray
  4. Whisk dry ingredients together
  5. Cut in butter with pastry blender or 2 knives until the sice of peas
  6. Stir in cheese
  7. Combin buttermilk and egg
  8. Stir into flour mixutre just until incorporated
  9. Prtion batter with an ice cream scoop or 1/4 c measure onto prepared baking sheet
  10. Bake until tops begin to brown, 15 minutes.
  11. While bisciuts are abking, prepare scampi.
  12. SCAMPI
  13. Combine cilantro, lime juice and chilies in large bowl, set aside
  14. Lightly dust shrimp with flour, shke of exxcess
  15. Add 2 T olive oil to non stick skillet
  16. Saute shrimp over med high heat, 2 minutes
  17. Stir in garlic, cook until fragrant, about 30 seconds
  18. Deglaze pan with wine, scraping any bits ofrm obttom of pan
  19. Simmer until reduced by half, about 2 minutes
  20. Stir in butter until melted
  21. Add shrimp to cilantro mixture and toss to coat, season with salt
  22. Serve shrimp and sauce over cheddar biscuits, rice or pasta
