Ingredients:

Directions:

  1. Combine flour, cornmeal, baking powder, baking soda, sugar and salt.
  2. Stir in cornmeal.
  3. Lightly beat egg, then add buttermilk, oil, corn, chilies, cilantro and onions.
  4. Add to dry ingredients then stir until combined.
  5. Heat griddle or skillet over medium heat.
  6. Grease griddle with shortening then pour batter onto hot griddle.
  7. Cook pancakes until puffed and dry around edges.
  8. Turn and cook other sides until golden brown.
  9. Serve with salsa and sour cream spooned over warm pancakes.
