  1. Process first 6 ingredients in blender until combined, add boiling water and blend until smooth. Pour into pie shell.
  2. Bake at 400F for about 20 minutes until set. Cool.
  3. Top with whipped cream and garnish with a couple of fresh cranberries or dried cranberries.
