Ingredients:

Directions:

  1. Saute the onion and bell pepper in butter.
  2. Mix together the 2 eggs, 2 cans of corn and the corn muffin mix.
  3. Add the onions and peppers, and pour all into a 9/ 13 casserole dish.
  4. Mix the sour cream with a little milk and spread on top of casserole.
  5. Sprinkle cheese and paprika over all.
  6. Bake at 325 degreees for 45 minutes or until done.
