Christmas Bran Muffins

Ingredients:

  • 1 1/2 cups sugar
  • 3/8 cup butter
  • 2 cups buttermilk
  • 2 eggs
  • 2 1/2 tsp baking soda
  • 1 tsp salt
  • 2 1/2 cups flour

Directions:

  1. Pour boiling water over shredded wheat biscuits. Let cool.
  2. Cream sugar and butter together until light and fluffy.
  3. Add cooled shredded wheat
  4. Add eggs separately, beating until well blended.
  5. Stir baking soda into buttermilk. *.
  6. Add buttermilk and soda to mixture. **.
  7. Add salt, bran flakes and flour.
  8. Stir just to blend.
  9. Store in refridgerator for three days.
  10. Do not stir.
  11. Spoon into muffin cups (1/2 -3 /4 filled).
  12. Bake at 400 degrees for 10 – 15 minutes.
  13. If using a buttermilk substitute:.
  14. * Stir together the baking soda, flour and buttermilk powder.
  15. ** Add the water called for by the buttermilk substitute.
