Chocolate Peanut Butter Pudding

Ingredients:

  • 1/2 cup sugar
  • 1/4 cup cocoa
  • 3 tbsp cornstarch
  • 2 cups skim milk
  • 1/2 cup peanut butter
  • 1 tsp vanilla

Directions:

  1. In a medium saucepan, combine sugar, cocoa and cornstarch.
  2. Stir together milk, peanut butter and vanilla; add to sugar mixture.
  3. Cook and stir over medium heat until thickened and bubbly.
  4. Cook and stir 2 minutes more.
  5. Remove from heat.
  6. Pour into a bowl and cover surface with plastic wrap.
  7. Chill until set or up to 24 hours.
