Chocolate Peanut Butter Cup Cookies

Ingredients:

Directions:

  1. Heat oven to 350*.
  2. Place sheets of foil on countertop for cooling cookies.
  3. For cookies, combine chocolate chips and chocolate squares in microwave-safe bowl.
  4. Stir after 2 minutes.
  5. Repeat until smooth.(or you can melt on rangetop in small saucepan over very low heat).
  6. Cool slightly.
  7. Combine sugar and 1/2 cup shortening in large bowl.
  8. Beat at medium speed with electric mixer until blended and crumbly.
  9. Beat in eggs, one at a time, then salt and vanilla.
  10. Reduce speed to low.
  11. Add chocolate slowly.
  12. Mix until well blended.
  13. Shaped dough into 1 1/4 inch balls.
  14. Roll in nuts.
  15. Place on cookie sheet.
  16. Bake for 8 to 10 min. or until set.
  17. Do not overbake.
  18. Press peanut butter cup into center of each cookie immediately.
  19. Cool 2 min. on baking sheet.
  20. Remove cookies to foil to cool completely.
  21. For drizzle, place peanut butter chips in heavy resealable sandwich bag. Seal. Microwave at 50% power.
  22. Knead bag for 1 minute.
  23. Repeat until smooth.
  24. Cut tiny tip off corner of bag.
  25. Squeeze out drizzle over cookies.
