Chilled Cream Of Celery Root Soup

Ingredients:

  • 2 small celery root
  • 1 1/2 cups buttermilk
  • 1/4 tsp salt
  • 1 dash white pepper
  • 1/2 cup finely chopped chives or 1/2 cup green onion top

Directions:

  1. Peel the celery root and dice into 1/2-inch cubes.
  2. Place it in a steamer and steam over boiling water for 10 minutes, or until tender enough to be easily mashed.
  3. Remove celery root from steamer and reserve one cup of liquid.
  4. Put one-third of the celery root and the reserved liquid in a blender.
  5. Blend until smooth, alternately adding the remaining celery root along with the buttermilk, salt and white pepper.
  6. Blend until smooth.
  7. Pour into a bowl and add the chopped chives.
  8. Mix thoroughly.
  9. Chill before serving.
  10. Serve in chilled soup bowls or mugs.
