  1. Heat oil over medium high heat in a non-stick pan and cook the onion for 3-4 minutes, until tender. Stir frequently to avoid burning.
  2. Add the pork and chili powder and cook, stirring constantly, until pork is no longer pink.
  3. If the pan is large enough, add remaining ingredients and simmer, covered, for 15 - 20 minutes until yam chunks are tender. If your pan isn't large enough, transfer the meat and onion mixture to a large pot such as a dutch oven to combine the ingredients and simmer that for 15 - 20 minutes. Stir occasionally to prevent sticking.
