Ingredients:

  • 2 whole pineapples cut in half starting at the top the greenery lenghtwise and cut out the inside of the pineapple into chunks, making sure you leave about a 2 inch thickness
  • 1/2 stick butter or margarine
  • 2 cups mircale whip salad dressing add 3 tablesppoons of sugar to the dressing mixing well then set aside
  • salt to taste

Directions:

  1. Rinse the chichen breasts off then pat dry with paper towels.
  2. Turn stove on medium heat.
  3. Place skillet on stove when skillet is hot put butter in the skillet
  4. Place the chicken breast in skillet making sure that butter is not burning.
  5. Cook on each side od chicken breast till chicken is white in color
  6. When there is no longer pink showing or blood running from chicken.
  7. Do this until all chicken breast is cooked.
  8. Set the chicken aside to cool.
  9. While chicken is cooling, make sure you have cut the pineapples lenghtwise the long way green leaves and all. Hollow out the pineapple into chunks leaving at least 2 inches in the body of the pineapple. set the cut chunks of pineapples aside
  10. Once the chicken is cooled cut into diced piceces and place into a lage bowl. Add the diced celery, bell peppers and the scallions.
  11. Mix together.
  12. Now add the mircale whip that has the added sugar and mix well with the chicken and the celery,peppers,and scallions season with salt , and pepper if you prefer take the chicken salad and put in the hollowed out pineapples. I serve these on a very large tray so that as many as 8 t0 12 people can serve themselves buffet stlye along with other items that I prepare, I hope you see what I strive to do by looking at my photo that I am sending .
  13. You can serve with assorted crackers, added fruit and drinks.
