Chicken in Pineapple-Orange Sauce

Ingredients:

Directions:

  1. Set oven to 350 degrees.
  2. Grease a med-size roasting pan.
  3. Sprinkle chicken pieces with salt, pepper and paprika.
  4. Brown lightly on both sides.
  5. Place browned chicken pieces in roasting pan.
  6. In a bowl, mix together, the tomato sauce, orange juice, brown sugar, seasonings and 1/2 cup juice from the canned pineapple.
  7. Pour over chicken pieces.
  8. Bake, covered for approx 30 mins, uncover, and bake for another 30 mins, or until chicken is cooked, basting occasionally.
  9. Add drained pineapple chunks, 5 mins before removing from oven.
  10. Note: if sauce cooks down too much, add pineapple juice.
  11. Serve with white rice.
