Ingredients:

  • 4 tsp salt
  • pepper to taste
  • 3 cup flour

Directions:

  1. Place hen in deep kettle; cover with water. Ad 3 teaspoons salt and pepper; bring to a boil. Reduce heat; cover tightly. simmer for a at least 2 hours or until hen is very tender. Remove chicken from broth and cool chicken. Remove fat from broth and save in another container. Remove chicken from bones; chop. Mix flour and remaining salt; stir in just enough (boiling) hot broth to make stiff dough. Place on floured board; knead until very stiff. Roll out dough, until thin. Cut into squares, Add fat back into broth and bring to a boil. Add the squares one at a time when broth is bubbling. Cook until dumplings are tender, add chicken and heat thoroughly.
