Ingredients:

Directions:

  1. Preheat oven to 450°F.
  2. Combine milk, flour, salt, and butter.
  3. Beat until just smooth.
  4. Beat in eggs one at a time.
  5. Stir in cherries.
  6. Let batter rest at room temperature for 15 minutes.
  7. Meanwhile, generously butter or grease 12 muffin cups.
  8. Place in oven to preheat.
  9. When batter has rested, carefully remove pans from oven.
  10. Fill each cup about 3/4 full.
  11. Bake for 20 minutes.
  12. Reduce heat to 350° and bake for 10-15 minutes longer, or until puffed and golden brown.
  13. Remove pans from oven.
  14. Carefully pierce a hole in the top of each popover to let steam escape.
  15. Cook 5 minutes before serving.
