Cheesy Potato Pie

Ingredients:

  • 3 large onions
  • 1 large can tomatoes
  • 6-8 oz cheddar cheese , mostly cubed but some grated for the top
  • salt and pepper

Directions:

  1. Peel potatoes, cut to the size of small roasties and boil until done.
  2. Slice onions and fry until tender and just browning.
  3. Drain and roughly chop the tomatoes. Discard as much of the liquid as you can - or save it to put a Vodka in later. In an ovenproof casserole dish, layer potatoes, onions, tomatoes and cubed cheese - but don't be fussy about it, I give it a bit of a mix together to combine them all and add the salt and pepper now, to your taste.
  4. Finish with the grated cheese on top and bake in a moderate oven for 40 minutes.
  5. We love this with sausages.
