Ingredients:

Directions:

  1. In a small skillet, melt butter over medium heat. Add shallot and saute until soft, 3 minutes. Add garlic and cook for 2 minutes longer. Transfer to food processor and let cool.
  2. Add Guinness, cheese, caraway and paprika to food processor and blend until smooth. Season with salt and pepper to taste. Chill at least 4 hours.
  3. When ready to serve sprinkle with parsley. Serve with crackers.
