Ingredients:

Directions:

  1. Pour the soaked beans in a saucepan and cook, covered, until tender, adding water if necessary. (Soaking them overnight the day before making works well.)
  2. Heat 3 Tbsp oil in a skillet, add the peppers and onions, and cook until the onions are translucent. Add the garlic and parsley, stir, and set aside.
  3. Heat remaining oil and butter in a large pot (large enough for all ingredients).
  4. Add the beef and cook about 25 minutes, stirring to break up the largest lumps (pieces about the size between a dime and nickel are good, though).
  5. About halfway through cooking the beef, add the chili powder and cumin and cook, stirring to coat the meat with the spices.
  6. After meat has cooked for 25 minutes, add the cooked peppers and onions to the meat. Stir.
  7. Add the tomatoes, salt, and pepper.
  8. Simmer for 60 minutes, stirring often.
  9. Add the beans and water and continue cooking for an additional 30 minutes.
  10. Skim off fat.
  11. Serve with sour cream, chopped onions, shredded cheddar cheese, and crackers.
