Ingredients:

  • 1/2 cup wheat bran
  • 1 1/2 tsp cinnamon
  • 1 cup hot water
  • 1/2 cup lite syrup
  • 1 tbsp canola oil

Directions:

  1. Preheat oven to 375 degrees
  2. Brew both bags of tea in the 1 cup of hot water.
  3. Mix dry ingredients together in a large mixing bowl.
  4. When tea is brewed, remove tea bags and add tea to dry mixture.
  5. Add the remaining wet ingredients and mix well.
  6. Spoon into prepared muffin tins. Bake at 375 degrees F for 20 to 25 minutes. Makes 12 muffins.
  7. I eat a few of these the morning before a marathon. There is just enough caffeine to get me going, without dehydrating me over the course of the race. Furthermore, the oatmeal, bananas, and oat bran are staples in most runners race day breakfast meals.
