Ingredients:

  • 1 1/2 cup. all-purpose flour
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 1/2 cup. (1 stick) butter or margarine
  • 1 1/2 cup. firmly packed brown sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 1 cup. cashew pieces

Directions:

  1. Preheat oven to 350 ° F.
  2. Grease a 13 x 9 baking pan.
  3. Sift together flour, baking powder and salt; set aside.
  4. Melt butter in large saucepan over low heat.
  5. Remove from heat and stir in sugar, eggs, flour mixture and vanilla; mix well after each additions.
  6. Spread batter in prepared pan.
  7. Sprinkle evenly with cashew.
  8. Bake 25 to 30 minutes or until golden brown and edges begin to pull away from sides of pan.
  9. Cool on wire rack before cutting.
  10. Cookies freeze well.
  11. Makes 24 2-inch squares.
