Ingredients:

  • 1 1/2 lb. carrots
  • 1 lb. parsnips
  • 3 tbsp butter
  • 3 tbsp brown sugar
  • 1 cup onion
  • 3 tbsp ginger

Directions:

  1. Place carrots, parsnips, ginger, and onions in a roasting pan.
  2. Dot with butter and sprinkle with brown sugar.
  3. Pour two cups of the broth in the pan, cover tightly with foil and bake at 350 for 2 hours.
  4. Combine contents of roasting pan with rest of broth in food processor and blend until smooth.
