Ingredients:

Directions:

  1. Set oven to 350 degrees (oven rack to second-lowest position).
  2. Grease an 11 x 7-inch baking dish.
  3. Sift together, baking soda, salt, cinnamon and allspice.
  4. With an electric mixer beat sugar and butter until well blended (about 3 minutes).
  5. Add in eggs and lemon juice and beat well to combine.
  6. Add in the dry ingredients; beat until blended.
  7. Stir in the carrots and raisins with a wooden spoon.
  8. Transfer the better to prepared baking pan.
  9. Bake for about 40 minutes.
  10. Cool then slice.
