Carrot Cake With Pecans And Raisins

Ingredients:

  • 2 cups flour , sifted
  • 2 tsp. cinnamon
  • 1 tsp. baking soda
  • 1 tspl salt
  • 2 cups sugar
  • 1 1/4 cup vegetable oil
  • 4 eggs
  • 1 cup raisins

Directions:

  1. Preheat oven to 350 degrees F.
  2. Sift flour, baking powder, cinnamon, baking soda, and salt together and set aside.
  3. Beat sugar into oil.
  4. Blend dry ingredients with oil and sugar.
  5. Add eggs one at a time, mixing well after each egg.
  6. Fold in carrots, pecans, and raisins.
  7. Pour into a lightly oiled 10-inch tube pan.
  8. Bake about 1 hour 10 minutes.

  11. 8 oz. cream cheese, softened
  12. 2 sticks of butter, softened
  13. 1 3/4 cup to 2 3/4 cup powdered sugar, sifted
  14. 1 tsp. vanilla
  15. Mix together well.
  16. Spread over cooled cake.
