Ingredients:

  • 2 1/2 tsp baking powder
  • 1 egg
  • 1 3/4 cup flour
  • 2/3 cup milk
  • 1/2 cup raisins
  • 1 tsp salt
  • 1/4 cup sugar
  • 1/3 cup vegetable oil

Directions:

  1. Mix flour, baking powder and salt in a bowl. Place milk, oil, egg, sugar and carrots in a blender or food processor and blend until carrots are very finely chopped Pour over dry ingredients. Mix and add raisins. Spoon into greased muffin pans, filling 2/3 full. Bake at 375 degrees for 25 minutes. Makes 8-10 muffins.
