  1. Preheat oven to 350 degrees F. Grease two cookie sheets or line with parchment paper.
  2. Stir together the flour, cinnamon, baking soda and salt in a medium bowl. Beat the brown sugar and butter in a large bowl with an electric mixer at medium speed until creamy. Add the egg and vanilla; beat until well blended.
  3. Stir in the flour mixture. Stir in the carrots, nuts, raisins and coconut. Drop dough by tablespoonfuls 2 inches apart onto the cookie sheets.
  4. Bake for 10 to 13 minutes or until cookies are set and the edges are lightly browned. Cool the cookies on the cookie sheet for 1 minute, then transfer to wire rack to cool completely.
  5. Makes about 3 dozen cookies.
