Ingredients:

  • 1 can of black beans
  • 1 medium onion
  • 4 cloves of garlic
  • 8 medium tomatillos
  • 10 slices of bacon

Directions:

  1. Finely chop onion and garlic, set aside.
  2. Finely chop cilantro including stems and set aside. leave some for garnish.
  3. Slice beef in small and thin slices, the thiner the better this is very important so beef is tender.
  4. Chop bacon very small pieces and cook in a skillet on medium high until almost crunch.
  5. Add beef, half of the onions, half of the cilantro half of the garlic, brown for about 3 more minutes and move to a large sauce pan or a pressure cooker.
  6. In a blender add tomatillos, the rest of the onion and garlic and enough water to just cover mix until liquid.
  7. Add the mix to the beef and 4 spoons of the beans.
  8. If using the pressure cooker close and cook medium high for 20 minutes.
  9. If using sauce pot bring to a boil medium high then simmer medium for 30 minutes.
  10. To serve add 2 spoons of the remaining beans on top of each plate and garnish with cilantro.
