Caraway Beer Quick Loaf

Ingredients:

  • 1-1/2 tsp salt
  • 1/4 cup butter
  • 2 eggs
  • 3/4 cup buttermilk
  • 3/4 cup beer

Directions:

  1. In large bowl, stir together flour, sugar, baking powder, salt and baking soda.With pastry blender or two knives, cut in butter until mixture resembles fine crumbs. Stir in caraway seeds.
  2. In separate bowl, beat together eggs, buttermilk and beer; add to flour mixture all at once, stirring with fork to make soft dough.
  3. Turn out dough onto lightly floured surface; knead lightly about 10 times. Shape dough into oval to fit into greased 9 x 5 -inch (2L) loaf pan.
  4. With serrated knife, cut shallow slash lengthwise down center.
  5. Bake in center of 350*F (180*C) oven for 1 to 1-1/4 hours or until golden brown and cake tester inserted in center comes out clean.
  6. Remove from pan; let cool on rack.
  7. Makes 1 loaf, 12 slices.
