  2. Preheat oven to 350 degrees F; cut top of garlic bulb. Place bulb in foil and drizze with olive oil. Seal foil and roast garlic in oven 45 - 60 minutes or until soft. While garlic is roasting heat olive oil in a saute pan over medium heat; add onions and salt. Cook the onions until they are caramelized, about 20 -30 minutes. Remove from heat and set aside to cool. In medium bowl, mash 3 (or more if you really like garlic) cloves of garlic. Add sour cream, mayo, white pepper and 1/2 tsp. kosher salt and mix thoroughly. Stir in cooled onions and refrigerate 4 hours. Stir before serving.
