Caramel Pecan Pie

Ingredients:

  • 1/4 cup margarine
  • 1/4 cup water
  • 3/4 cup sugar
  • 1/2 tsp vanilla
  • 1/4 tsp salt
  • 1 cup pecan halves

Directions:

  1. On a lightly floured surface, roll pastry to 12-inch circle
  2. Place in a 9-inch pie plate
  3. Turn under edge, flute.
  4. Unwrap caramels and melt with margarine & water in heavy saucepan over low heat, stirring frequently until smooth.
  5. Gradually add to combined sugar, eggs, vanilla and salt; mix well
  6. Stir in pecans; pour into pastry shell
  7. Bake at 350 degrees, 45 to 50 minutes or until pastry is golden brown.
  8. Cool - Filling appears soft, but will firm as it cools
  9. Top with whipped cream or have some ice cream!
