Caramel Corn Cake

Ingredients:

  • 1 can (17 oz) cream style corn
  • 1/2 cup packed brown sugar
  • 3/4 cup of white sugar
  • 3 eggs
  • 1 tbsp of baking powder
  • 2 1/4 cup flour
  • 1 tsp of baking soda
  • 1 tsp of salt
  • 1 tsp of cinnamon
  • 1/2 cup of chopped pecans
  • frosting
  • 4 tbsp of butter
  • 1/2 cup packed brown sugar
  • 1/4 cup milk
  • 2 to 3 cups of powdered sugar

Directions:

  1. In mixing bowl, combine corn and sugars.
  2. Add eggs and oil.
  3. Beat until blended.
  4. Combine dry ingredients, then add to batter and mix well.
  5. Stir in raisins and nuts.
  6. Pour into greased 9 x 13 pan.
  7. Bake at 350 degrees for 30 minutes until cake tests done.
  8. Cool thoroughly.
  9. Frost.
  10. Make Frosting by:
  11. Bring butter and brown sugar to boil over medium heat.
  12. Remove from heat and stir in milk.
  13. Stir in powdered sugar until desired consistency is acheived.
  14. Frost cooled cake.
  15. Makes 12 - 15 servings
