Ingredients:

  • cape cod cranberry bundt cake
  • 3 eggs
  • 2 cups sugar
  • 2 cups flour
  • 1 cup buttermilk
  • 1 tsp cinnamon
  • 1 tsp ground cloves
  • 1 tsp salt
  • preheat oven to 350 degrees. in a large mixing bowl beat eggs using an electric mixer until foamy. add sugar, and continue beating until mixture is light and fluffy. stir in olive oil. in a small bowl combine baking soda and buttermilk. alternately beat the flour and the buttermilk mixture into the egg mixture. stir in remaining ingredients, and pour into a 9 inch tube or bundt cake pan, lightly oiled with olive oil and floured. bake for 1 hour or until a tester comes out clean.
