Cape Cod Cranberry Bundt Cake

Another wonderful cake for the holiday season.
Ingredients:
cape cod cranberry bundt cake
1 cup olive oil, plus some for oiling the pan
3 eggs
2 cups sugar
2 cups flour
1 cup buttermilk
1 cup fresh, frozen or dried cranberries
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon ground cloves
1 teaspoon salt
preheat oven to 350 degrees. in a large mixing bowl beat eggs using an electric mixer until foamy. add sugar, and continue beating until mixture is light and fluffy. stir in olive oil. in a small bowl combine baking soda and buttermilk. alternately beat the flour and the buttermilk mixture into the egg mixture. stir in remaining ingredients, and pour into a 9 inch tube or bundt cake pan, lightly oiled with olive oil and floured. bake for 1 hour or until a tester comes out clean.
