Ingredients:

Directions:

  1. On two large pieces of foil, divide potatoes, carrots, onion, celery, spices, salt and pepper. Drizzle with oil.
  2. Fold foil over potatoes, wrap again in another sheet of foil (make as tight as possible as you don't want the oil to leak ).
  3. Place on bbq at medium high heat, turning often for 45 minutes.
  4. Remove from heat and let stand 5 minutes.
  5. Transfer to a large bowl and sprinkle with fresh chopped parsley.
  6. (My oldest likes a dab of sour cream on hers).
