  1. Preheat oven to 425 degrees. Cover large baking sheet with parchment paper. Combine buttermilk and egg whites in a bowl and stir to combine. Combine flour, cornmeal, 1/2 tsp salt, 3/4 tsp pepper and cayenne pepper in another bowl. Sprinkle chicken with a little salt. Dip chicken into buttermilk mixture, then dredge in flour mixture.
  2. Heat oil in a large nonstick skillet over medium-high heat. Add chicken to pan. Cook four minutes on each side or until lightly browned. Place chicken on prepared baking sheet. Spray chicken with cooking spray. Bake for 30 minutes or until chicken is done.
