Ingredients:

Directions:

  1. Dice the tomato, red onion, and garlic clove and mix together in large bowl.
  2. Shred Fontanella cheese and place in bowl. Stir.
  3. Add in red wine vinegar and pepper to taste.
  4. Slice French loaf into 1/4 to 1/2 thick disks. Toast the disks in oven (if making a lot), toaster oven (if it's a smaller batch), or even in the toaster, if it's just a snack for you!
  5. Spoon mixture onto disks. You can also put the disks back into the oven/toaster over (but not the toaster!) if you prefer it warm.
  6. I have found that this mix is much better after sitting for a few hours in the fridge.
