Ingredients:

Directions:

  1. Use spelt flakes, not spelt flour.
  2. Preheat oven to 325 degrees F.
  3. Combine spelt, cherries, flax seeds, pecans, pistachios and salt. Set aside.
  4. Over medium heat, melt peanut butter, honey, and vanilla until smooth. Crunchy peanut butter works too.
  5. Grease an 8 x8 glass pan. Line it with parchment.
  6. Combine peanut butter mixture with spelt and nut mixture until sticks together slightly. Put into greased pan, spread and smooth the top.
  7. Bake for 20-25 minutes, until golden brown around edges. Cool completely in pan. Invert and cut into 8 pieces. Wrap individually to retain freshness. Hold up to a week at rm temp, 3 months frozen.
