Brandi's Yummy Spinach Omelet

Ingredients:

  • 2 eggs (equivalent in egg beater's)
  • 1/4-1/2 tsp white pepper
  • 1/4-1/2 tsp nutmeg
  • 1 pinch salt (optional)
  • 2 tbsp olive oil ( butter or margarine may be substituted)
  • 3 tbsp cheese (optional)

Directions:

  1. In a blender or by hand, combine eggs, spinach, salt, pepper and nutmeg.
  2. Blend until thoroughly mixed.
  3. In a small frying pan heat olive oil.
  4. When oil is hot pour egg mixture into pan and cook as you would normally cook any omelet.
  5. When eggs are throughly cooked in omelet form, add cheese to half of omelet and fold.
  6. Bon appetit!
