Bran and Oat Scones

Ingredients:

  • 1 cup 100% all-bran cereal
  • 1/2 cup raisins or 1/2 cup currants
  • 1 1/4 cups plain yogurt
  • 1 cup flour
  • 1/4 cup sugar
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/3 cup margarine or 1/3 cup butter

Directions:

  1. Combine cereal, oats, raisins and yogurt. Let stand to soften.
  2. Combine flour, sugar, baking powder and soda, salt, cinnamon, and nutmeg in a large bowl.
  3. Cut in margarine until crumbly, then add cereal mixture and stir until just moistened.
  4. Turn onto a floured surface and knead 10 times or until smooth.
  5. Flatten to a 9 inch circle or 2 x 6 inch circles. Sprinkle with sugar and cinnamon.
  6. Place on a greased cookie sheet and bake at 425 F for 20 minutes, then cut into wedges!
