Black Forest Cheesecake Parfaits

Ingredients:

  • 1/2 cup sugar
  • 2 tbsp. lemon juice
  • 3/4 cup chocolate wafer cookie crumbs
  • whipped cream

Directions:

  1. Put frozen cherries and preserves in saucepan and bring to boil
  2. Simmer 5 minutes the remove from heat and cool completely
  3. Combine sugar, juice and cheese and beat with a hand mixer until smooth. Cover and chill
  4. Spoon 2 tsp. crumbs into each glass; top with 1 1/2 tsp. cream cheese mixture and 3 tbls. cherry mixture. Repeat layers. Garnish with a dollop of whipped cream.
