Ingredients:

Directions:

  1. Chop celery, bell peppers, and onions.
  2. Drain black-eyed peas if using canned.
  3. Combine all ingredients except ground red pepper.
  4. Let stand for 20 minutes.
  5. Add small amounts of red pepper until slightly spicy.
  6. Cover and chill at least 4 hours.
  7. Taste how spicy it is, and add more red pepper if necessary. It will continue to get spicier as it sets.
