Directions:

  1. Combine water and wheat berries in a medium saucepan, bring to boil; reduce and cover 55 minutes simmering or until wheat berries tender;
  2. Place in a fine mesh strainer, run under cold water to cool quickly, drain.
  3. Combine wheat berries with remaining ingredients in a medium bowl, serve immediately or refrigerate for 8 hours
  4. Servings here are 1 and 1/4 cup
  5. 1 cup= 245 grams
  6. Edamame are frozen, so thaw
