Bisquick Peanut Butter & Jelly Cookies

Ingredients:

  • 1/2 cup brown sugar , packed
  • 1/2 cup peanut butter
  • 1/4 cup shortening
  • 1/4 cup egg beaters
  • 1 1/2 cups bisquick

Directions:

  1. In a large bowl, mix sugars, peanut butter, shortening, and egg beaters on low speed for thirty seconds, scraping bowl constantly. Then mix on medium speed for one minute, scraping bowl occasionally.
  2. Stir in Bisquick until well blended and you have a ball of soft dough.
  3. Turn dough out onto a surface coated with Bisquick mix and roll it around in the Bisquick to coat it. Divide dough into four sections.
  4. Shape each section of dough into a roll that is approximately 3/4 inch in diameter and 13 inches long. Place on large, ungreased cookie sheet about two inches apart.
  5. Using the handle of a wooden spoon, make an indentation lengthwise along each roll. Spoon jam into the indentation.
  6. Bake 9 to 13 minutes, until golden brown and set. Remove from oven. Cool on cookie sheet for five minutes. Slice each roll into 9 pieces. Transfer from cookie sheet to cooling rack and let cool completely.
