Ingredients:

  • 2/3 cup oil
  • 1 tsp vanilla
  • 1/2 cup walnuts, chopped (optional)
  • 1 1/2 cups sugar
  • 2 eggs
  • 2 cups flour
  • 1/2 tsp salt

Directions:

  1. Cream oil and sugar together.
  2. Blend in bananas, eggs and vanilla beating well with a mixer.
  3. Combine dry ingredients with wet ingredients and mix well.
  4. Pour mixture into 3 8x3-inch loaf pans or one 9x13-inch loaf pan
  5. Bake at 350°F for 30-40 minutes.
